Non-Fat Tuesday: Snickerdoodle Cookie Recipe


Well, it's December already and you know what that means.. planning for next year's diet. Since working out is the last thing on my mind this holiday season, I am going to focus on recipes on Non-Fat Tuesdays for the rest of 2014. If you are continuing a workout routine, way to go and more power to you! Please lend me some motivation in the comments below.

A Snickerdoodle is a cinnamon-sugar cookie that I would say tastes like the cookie version of Cinnamon French Toast. I came up with this recipe when I ran out of ingredients trying to make a cookbook recipe for Snickerdoodles years back. These cookies are deliciously chewy and simple to bake. 

Ingredients
  • 2- Eggs
  • 1/2 Cup Butter
  • 1/2 Cup Shortening
  • 3/4 Cup White Sugar
  • 3/4 Cup Brown Sugar
  • 2 1/2 Cups All-Purpose Flour
  • 2- Teaspoons Cream of Tartar
  • 1- Teaspoon Baking Soda
  • 1/8 Teaspoon Salt
Topping
  • 4-Tablespoons White Sugar
  • 4-Tablespoons Cinnamon

Directions

1. Mix eggs, butter, shortening, white sugar, and brown sugar in a large bowl.
2. Add in Cream of Tartar, baking soda, flour, and salt.
3. Mix topping ingredients in a small bowl. 
4. Roll dough into 2-inch balls and then roll the ball in your cinnamon-sugar dry topping.
5. Bake at 400 degrees for 8-10 minutes or until light-golden brown.

Tip: You can substitute butter for shortening, and baking soda for Cream of Tartar but the cookie's consistency may change.
