Non-Fat Tuesday: Simple Thanksgiving Recipes

Only two days left until Thanksgiving! So, in honor of the holiday, I am dedicating Non-Fat Tuesday to yummy Thanksgiving food. I did not include anything about turkey in this post just to keep it simple.

These recipes are special because they are all my mom's recipes! I am so thankful for her so this is for you mom! Hopefully you actually read my blog, haha.



Garlic Mashed Potatoes
Serves 10-12

Ingredients

  • 5 -Pounds Red Potatoes, cubed (peeling optional)
  • 1 ½ -Cup Butter
  • ½ -Cup Romano Cheese, grated
  • ¼ -Cup Garlic, minced
  • 2- Teaspoons Salt
  • 2- Teaspoons Oregano


Directions
1. Boil potatoes in lightly salted water until soft.
2. Remove from flame and drain.
3. Add in the remaining ingredients. If you don't have Romano cheese, just use Parmesan



Green Bean Casserole
Serves 6-8

Ingredients

  • 2- 14.5 Oz Cans of Green Beans
  • 1- 10 OZ Can of Cream of Mushroom Soup
  • 1- 6 Oz Can of French Fried Onions
  • 1- Cup Cheddar Cheese, shredded

Directions
1. Combine green beans and soup in a small pot. Bring to a boil on a low flame.
2. Stir in ¾ cup of cheese.
3. Remove from heat and pour mixture into a casserole dish.
4. Top with remaining ¼ cup of cheese and 2/3 of the can of French fried onions.
5. Bake at 350 degrees for 15-20 minutes.
6. Top with remaining French fried onions to add some crunch!


Chicken Pot Pie
Serves 6-8

Ingredients

  • 1-Pound Chicken breast, cubed
  • 1-Cup frozen peas
  • ½ -Cup Celery, diced
  • 1-Cup Carrots, cubed
  • 1/3 Cup Onions, chopped
  • 1/3 Cup Butter
  • 1/3 Cup All-Purpose Flour
  • ½ -Teaspoon Salt
  • ¼ -Teaspoon Black Pepper
  • ¼ -Teaspoon Celery Seed
  • 1 ¾ -Cups Chicken Broth
  • 2/3 -Cup Milk
  • 2 -9” Unbaked Pie Crusts (typically sold in two pieces)

Directions
1. In a sauce pan, combine chicken, carrots, peas, and celery.  Boil for 15-20 minutes and drain.
2. In a pot, cook butter and onions until they are translucent. Then add in flour, salt, pepper, celery seed, chicken broth, and milk. Simmer on a medium flame until sauce begins to thicken. Remove from flame.
3.  Add one pie crust to a 9” round pan (round cake pan). Then place chicken and vegetable mixture inside of the crust evenly.
4. Pour hot mixture over your chicken and vegetables and cover with the second pie crust.
5. Cut off any extra dough before sealing your pie closed.  Use a fork to press your pie crusts together at the edges. Also, don’t forget to make slits in the center of your pie so it cooks thoroughly.
6. Bake at 400 degrees for 30-35 minutes or until crust is golden brown.

Note: This recipe is from All Recipes.com. I have been making it for a few years and it is amazing! I typically substitute the peas and carrots for a frozen California blend veggie though. Basically, you need 2 Cups of veggies, frozen or fresh.


Simple Stuffing
Serves 8-10

Ingredients

  • 1-16 Oz loaf of sliced bread (or ½ loaf of French bread)
  • ¾- Cup Butter
  • 1- Cup Onion, diced
  • 4- Celery Stalks, chopped
  • 2- Teaspoons Poultry Seasoning
  • 1- Cup Chicken Broth
  • Salt and Pepper to taste

Directions
1. Dry out your bread for at least 1-2 hours.
2. In a pot, cook the onions and celery in the butter on a medium flame until soft.
3. Add in poultry seasoning and bread.
4. Pour chicken broth over mixture and stir. Remove from flame.
5.  Transfer mixture into a buttered casserole dish. Bake at 350 degrees for 30-40 minutes.
 

Sweet Potato Casserole (can be served as dessert, too)
Serves 8-10

Ingredients

  • 5- Sweet Potatoes
  • ½ Cup Brown Sugar
  • ¼ Cup Butter
  • 2- Tablespoons Orange Juice
  • 1- Teaspoon Ground Cinnamon
  • 1 ½ Cup Mini Marshmallows

Directions
1. Boil potatoes until soft and drain.
2. Mash potatoes until Creamy.
3. Add sugar, butter, orange juice, and cinnamon to the potatoes and mix well.
4. Add mixture to a casserole dish and cover with mini marshmallows.
5. Bake at 350 degrees for 15 minutes or until marshmallows are golden brown.

  1. Great recipes! Hubby don't like the classic green bean casserole so I haven't had it in over 30 years. Boo!

    1. You should still make it for a holiday so other people in your family can enjoy. Honestly, it isn't my favorite but everyone else seems to love it.
