Non-Fat Tuesday: Healthy Eating Recipes (Low-Carb and Paleo)

Fall is here and with the holidays coming quickly. To balance out all of those fatty foods that you may be eating at your Halloween, Thanksgiving, and Christmas parties, I am going to be supplying you with a few healthy meal recipes. While I am not encouraging any type of diet, I do think its important to add some healthy meal options to your weekly meal plans when possible.

I found some recipes online that I am definitely going to try and share today. All of the recipes that I chose have high ratings from people who made them before.The recipes are from Allrecipes.com are low carb and Getcrocked.com and Paleo (natural eating) recipes. 

BREAKFAST

Low Carb Pancake Crepes (All Recipes.com)

Ingredients

  • 3 Ounces Cream Cheese
  • 2-Eggs, Beaten
  • 1-Teaspoon Ground Cinnamon
  • 1-Tablespoon Sugar-Free Syrup


Directions
1. Combine cream cheese, eggs, cinnamon, and syrup. Mix until you have no lumps left.
2. Use butter or nonstick spray to coat your pan.
3. Cook until small brown spots are on each side. This is not a battered pancake so you will have to make sure that it cooks properly. The recipe says about 4 minutes on first side, 1-2 minutes on the second side.


Spicy Sausage Quiche (All Recipes.com)

Ingredients

  • 1-Pound Pork Sausage
  • 1-Cup Shredded Cheddar Cheese
  • 1-Cup Monterey Jack Cheese
  • 1/2 –Cup Chopped Onion
  • 1-4 Ounce Can Chopped Green Chile Peppers
  • 1-Tablespoon Minced JalapeƱo Peppers
  • 10-Eggs, beaten
  • 1-Teaspoon Chili Powder
  • ½-Teaspoon Ground Cumin
  • ½ Teaspoon Garlic Powder
  • 1-Teaspoon Salt
  • ½ Teaspoon Pepper

Directions
1. Cook Sausage in a skillet. Drain and crumble when cooked.
2. Mix all remaining ingredients in a bowl.
3. Combine sausage with your mixture and pour into a 9X13 inch pan.
4. Bake at 375 for 18-22 minutes or until knife comes out clean from the center.
5. Cut into squares and enjoy!


LUNCH

Slow Cooker Paleo Easy Mexican Chicken Soup (GetCrocked.com)

Ingredients

  • 1-Pound Chicken Breast
  • 2-Cups Chicken Broth
  • 1-Red Bell Pepper, seeded and sliced
  • 1-Cup Onion, diced
  • 1-8 Ounce Can Tomatillo Sauce (Salsa Verde)
  • 2-Cloves Garlic, minced
  • 1- Tablespoon Chili Powder
  • 2-Teaspoons Cumin
  • 1-Teaspoon Oregano
  • 1-Teaspoon Sea Salt



Directions
1. Layer Onions and bell peppers at the bottom of your slow cooker.
2. Add chicken breast, uncooked
3. Season chicken breast with chili powder, cumin, oregano, and sea salt.
4. Add tomatillo sauce (salsa verde), garlic, and broth.
5. Cover and cook on High for 3-4 Hours or 6 Hours on Low.
6. Garnish with cilantro, chopped jalapeƱos, and lime.


Low-Carb Chocolate Peanut Butter Smoothie (All Recipes.com)
Ingredients

  • 1-Cup Almond Milk (Unsweetened Preferred)
  • 2-Cups Ice
  • 2-Tablespoons Peanut Butter (Natural kind better)
  • 2-Tablespoons Unsweetened Cocoa Powder
  • 1-Scoop Vanilla Flavored Whey Protein Powder (optional)
  • 2-Tablespoons Heavy Whipping Cream
  • 1/2-Teaspoon Vanilla Extract
  • 1-Teaspoon Sugar or Sweetener


Directions
1. Combine all Ingredients in a blender. Mix until smooth.
2. Refrigerate and enjoy for a healthy lunch option that may cure an afternoon sweet tooth.


DINNER

Low-Carb Mashed Cauliflower (All Recipes.com)
Ingredients

  • 1-Head Cauliflower, cut into florets
  • ½- Cup Whipped Cream Cheese
  • 2-Cloves Garlic, minced
  • 1-Teaspoon seasoned salt


Directions
1. Boil cauliflower until tender.
2. Remove from water and pat dry.
3. Blend all other ingredients with a food processor, blender, or hand mixer and enjoy!


Slow Cooker Paleo Lemon Pepper Chicken (GetCrocked.com)
Ingredients

  • 2 Teaspoons Lemon Pepper Seasoning
  • ½- Teaspoon Salt
  • ¼-Teaspoon Ground Black Pepper
  • 2-Pounds Chicken Breast or Thighs
  • ¼-Cup Water
  • 3-Tablespoons Fresh Squeezed Lemon Juice
  • 3- Cloves Garlic- Minced


Directions
1. Rinse chicken and pat dry.
2. Mix lemon pepper, salt, and black pepper in a bowl and rub on mixture.
3. Place chicken with marinade in your slow cooker.
4.  In another bowl, combine water, lemon juice, and garlic.
5. Pour the lemon-garlic mixture over the chicken.
6. Cover and cook on low for 5-6 hours.
7. Serve with chopped fresh parsley if desired.


Bacon Wrapped Pork Chops (All Recipes.com)

  • 6- 1 Inch thick boneless pork chops
  • 1-Cup Shredded Cheddar Cheese
  • 12 Slices of bacon


Directions
1. Cook bacon in skillet for a few minutes but do not make it crispy, you want medium (soft) bacon.
2. Wrap two slices of bacon around each pork chop.
3.  Cover each pork chop entirely with shredded cheese.
4. Bake uncovered at 350 Degrees for 1 hour.
