Non-Fat Tuesday: Crock Pot Favorites


Ahh, September.. one of the busiest months of the year for some people! If you have a child in school, work, and/or you are in school yourself, you could be running from morning to night with little time to even eat; let alone prepare a good meal.

For busy months like this, I tend to use my crock pot a lot to prepare meals while I sleep at night or while I am at work all day. Today I am going to be sharing some of my favorite fall time crock pot recipes, which will include breakfast, lunch, and dinner meal ideas.

BREAKFAST (BRUNCH)

1. Build Your Own Crock Pot Omelet

Ingredients:
  • 1-Cup Milk 
  • 12- Eggs
  • 2/3-Cup Shredded Cheese
  • Salt and pepper to taste
  • 2-3 Cups of meats and/or veggies

Directions:
-The base for this slow cooker omelet is above, but what you put in it is your choice; read suggestions below.
-The eggs should FULLY cover your meats and veggies but not be soupy.
-Cook for 4-6 hours on High or 8-10 hours on Low.
-The recipe can be scaled down too but you need to watch it or majority of the eggs will be brown. 

Suggested Meats- Must be precooked
  • Ham, diced
  • Canadian bacon, sliced
  • Steak, chopped
  • Bacon, chopped
  • Breakfast sausage, sliced
  • Polish Sausage, sliced
Suggested Vegetables
  • Tomato
  • Yellow Onion
  • Red Onion
  • Green Pepper
  • Red Pepper
  • Mushroom
  • Fresh Spinach
  • Jalapeno




LUNCH

2. Pulled Pork Sandwiches

Ingredients:

  • 2-Pounds Pork Roast (Butt or Shoulder if you can find it)
  • 1 1/2-Cups of Root Beer
  • 1-18 Oz. bottle of BBQ sauce (your choice)
  • Buns of your choice

Directions:
1. Trim fat if desired or remove after cooking
2. Cook on Low for 8-10 hours. The meat should fall apart. Serve on a bun.



3. Chicken Tortilla Soup

Ingredients:

  • 1-Pound of Chicken Breast
  • 1-14.5 Oz. Can of Diced Tomatoes
  • 1-10 Oz. Can of Enchilada Sauce (Mild or Hot)
  • 1-14.5 Oz. Can Chicken Broth
  • 1-6 Oz. Can of Whole Kernel Corn
  • 1/2 Cup Onion, Chopped
  • 1-Teaspoon Cumin
  • 2-Cups of Water
  • Salt and Pepper to taste

Directions:
1. Cook and shred chicken breasts.
2. Add all other ingredients to crock pot.
3. Cook for 4 hours on High or 8 on Low

Soup Topping Ideas
  • Shredded Cheddar, Taco, or Mexican Blend Cheese
  • Tortilla Strip Chips or Crushed Tortilla Chips
  • Fresh Onion 
  • Fresh Cilantro


DINNER


4. Crock-Pot Roast

Ingredients:

2-Pounds Chuck Roast or Beef Tenderloin
1- Packet of Dry Onion Soup Mix
1- 14 Oz. Can of Cream of Mushroom Soup (Campbell's Golden Mushroom preferred, trust me!)
1- Cup of Water
1-Garlic Clove, minced or 1/2 Teaspoon Garlic Powder
4-5 Large Potatoes
1-2 Cups of Baby Carrots or Sliced Carrots

Directions:
1. Trim fat if desired or remove after cooking
2. Cook on Low for 8-10 hours. The meat should fall apart


5. Slow Cooker Lime Chicken and Rice

Ingredients:

4-Chicken Breasts (trim fat)
2- Limes, juiced (save rinds for flavor)
1/2 Cup Chopped Onion
2- 14.5 Oz. Cans of Chicken Broth
1-Garlic Clove, minced or 1/2 Teaspoon Garlic Powder
1/2 Cup of Water
1/2 Teaspoon Cumin
2-Tablespoons Fresh Cilantro
2- Cups of Rice

Directions:
-Cook on High for 4-6 Hours or Low for 8-10 Hours.
-Serve with tortillas if desired.
